Chopped, limed, salted, jarred. That's it.
Nothing is cooked and nothing is added to make it keep, which is why it tastes like the vegetables it's made of and why it lasts ten days instead of ten months. Every jar is labeled with its make date and best-by.
Regular
Tomato, onion, jalapeño, a serious amount of lime and cilantro, salt. Chopped, not blended. The one that started it.

Pick your heat
| Level | What it's like | Good for |
|---|---|---|
| 🔥 Mild | All the flavor, almost no burn. Seeds out. | Kids, breakfast eggs, people who say they don't like spicy. |
| 🔥🔥 Medium | A pleasant warmth that builds. Where most people land. | Chips, tacos, everything. |
| 🔥🔥🔥 Hot | Serranos join the jalapeños. You'll notice. | Grilled meat, big bowls of beans, bragging. |
| 🔥🔥🔥🔥 Crazy Hot | We make you say "crazy hot" out loud when you order it. | Hot-sauce people. Dare we say, wings. |
Keeping it fresh
Refrigerate it the moment it arrives and keep it cold. It's best in the first five days and good through the best-by date on the lid, ten days from the make day.
Fresh salsa weeps a little lime-tomato juice as it sits. That's not a flaw; stir it back in, or spoon the juice over rice.
Things people put it on
Eggs. Grilled fish. Rotisserie chicken. Baked potatoes. Avocado toast. A spoon, standing at the fridge at 11 pm. The pineapple and mango are made for fish tacos and pork; the peach goes on vanilla ice cream, and we're not kidding.
